Kneeling on the body as a technique is demonstrated as a method of increasing the ability to apply pressure.

Future plans of wastewater systems, and self- generating power are discussed, along with conversion of diesel engines to burn re-cycled vegetable oils.

Wood fired clams, chorizo, and chiles are paired with a 2005 Voignier from Lambert Bridge -
a local winery on the Northwest side of Healdsburg - in the Dry CreekValley.
Crisp, floral bouquet to compliment the sweetness of the clams, and a nice acidity for balance.
Wood Fired Ovens also create the distinctive crusty tops on the Meyer Lemon Rosemary Bread and garlic .
Wood Fired Oven Flatbread pizza of collards, carmelized onions, and sausage is also demonstrated.
Thin crusts take less heat and time to bake.
